The impulse to keep it informal when you're running a single station is understandable — the operation feels simple enough to manage by feel. But "managing by feel" introduces inconsistency. Stock runs out before you notice. The machine goes a day without a wipe-down. A customer encounters a topping station that hasn't been restocked.

A simple daily SOP — a checklist covering open, service, and close — takes 10 minutes to run and prevents every one of those problems.

Morning Open (15–20 minutes)

Machine check:

  • [ ] Power on the device and confirm it initializes without error codes
  • [ ] Verify water supply connection is secure and valve is open
  • [ ] Run one test dispense cycle to confirm water flows correctly
  • [ ] Confirm touchscreen programs are displaying correctly

Product restocking:

  • [ ] Check noodle kit shelf levels — restock from back-of-house storage as needed
  • [ ] Check bowl supply — restock to full
  • [ ] Check topping station: refill all free topping containers (corn, nori, green onion, sesame)
  • [ ] Check premium topping refrigeration: verify temperature and product freshness
  • [ ] Check condiment station (chili oil, soy sauce, white pepper): refill as needed

Environment:

  • [ ] Wipe down the machine exterior and cooking surface
  • [ ] Wipe down the topping station and condiment area
  • [ ] Verify signage is in place and readable
  • [ ] Confirm payment system (POS or mobile payment) is powered on and functional

During Service

Ongoing (every 1–2 hours):

  • [ ] Check noodle kit shelf levels — restock if below 50% capacity
  • [ ] Check topping station levels — refill any depleted items
  • [ ] Wipe down the cooking surface and drip tray if needed
  • [ ] Check that the machine is operating without error codes

Customer interaction:

  • [ ] Position a staff member or signage within clear sightline of the machine for first-time customers
  • [ ] Be available to answer questions or assist with the cooking process

Evening Close (15–20 minutes)

Machine shutdown:

  • [ ] Run the Tank Cleaning cycle via Admin Backend (recommended daily)
  • [ ] Power off the device after the cleaning cycle completes
  • [ ] Close the water supply valve if required by your venue

Product closeout:

  • [ ] Return unused noodle kits to back-of-house storage
  • [ ] Cover or refrigerate any open premium toppings
  • [ ] Cover condiment containers

Environment:

  • [ ] Full wipe-down of machine exterior, cooking surface, and drip tray
  • [ ] Clean topping station and condiment area
  • [ ] Sweep or mop the station area
  • [ ] Secure payment system

Weekly Add-Ons

  • [ ] Check water tank interior for visible residue or buildup
  • [ ] Run a deeper cleaning cycle with approved cleaning solution
  • [ ] Review dashboard usage data: bowl count per day, time-of-day distribution
  • [ ] Update restocking order based on the week's consumption
