Most commercial food equipment guides don't mention winterization.

For operators running a NEO CUCINA station in a seasonal venue — a ski resort lodge, an outdoor market, a festival location, or any environment that drops below 41°F (5°C) during off-season — it's one of the most important procedures to know.

Residual water left in the machine's internal pipelines during freezing temperatures can cause freeze damage to internal components or water leakage. The fix takes about 15 minutes. The risk of skipping it is real.

When You Need to Winterize

  • Before moving the device to cold storage
  • Before shipping in cold weather
  • Before any extended non-use period in an environment below 41°F (5°C)
  • Before seasonal venue closure

If the device stays in a temperature-controlled environment above 41°F year-round, winterization is not required.

The Two-Step Procedure

Both steps must be completed. Draining the external tank alone is not sufficient — water also accumulates in the internal pipelines and must be cleared separately.

Step 1 — Drain the Water Tank

  1. Power off and unplug the device.
  2. Close the water inlet valve and disconnect the supply line.
  3. Locate the drain outlet at the back of the device (sealed with a gray plug during normal operation).
  4. Press and hold the gray locking ring, then gently pull out the plug.
  5. Allow all internal water to drain completely.
  6. Tilt the device in different directions to dislodge water from internal channels.

Step 2 — Drain the Internal Pipelines

  1. Plug the device back in and power it on.
  2. Tap the gear icon (top-right of home screen) to open Admin Backend.
  3. Enter the admin password.
  4. Tap "Drain Off Water".
  5. The front water outlet will discharge any remaining water from internal pipelines automatically.
  6. Wait for the drainage process to complete fully before powering off.

Step 3 — Final Check

  1. Power off and unplug.
  2. Reinstall the gray drain plug securely.
  3. Store in a dry location.

Returning to Service

After winter storage, reconnect the water supply, power on, and run a test bowl before opening to customers. Confirm water dispenses correctly and that the machine initializes without error codes.
